Harvesting at great maturity.
Maceration long.
Livestock and malolactic fermentation in oak barrels of 500 liters for 18 months. Last bottled without any filtration.
Tasting notes:
Cuvée high end of the domain, this wine is made only in vintage climate conducive to a mature Cabernet Sauvignon on the soil of "Côte de la Houssaye" (hill overlooking the valley of Hyrôme with an open landscape the southeast is a thin shale soil very hard sandstone).
