Varietal: 100% Chenin
Winemaking:
Harvesting by successive tries-selection of grains in extreme overripe grain by grain harvest if necessary (concentration by botrytisation (noble rot) or passerillage).
Vendange full pressed directly and with caution.
Fermentation in barrels of 500 liters.
None chaptalization. Search for a natural sweet wine with a good balance alcool-sucres-acidité.
Matured in barrels and on the lees for 18 months.
Tasting notes:
Cuvée high end of the field, this wine is produced only in the vintages in a climate conducive to extreme Chenin overripeness on the land "Clos des Bonnes Blanches" (gently sloping hillside near the Layon with a very open landscape, on a ground altérite schist).
The Chenin found in this sumptuous wine made an expression of complexity and balance. Flavors are sweet and generous:
Linden-associated with acacia honey,
- Lemon grass and citrus peel that bring vitality,
Tobacco-blond woods and delicate coat finally voluble this atmosphere.
The mouth finally leaves a wonderful impression of opulence supported by a race and a fine minerality and tactile.
Accompaniments:
This selection de grains nobles can only consume so much wealth was exceptional. Agreement also perfect on:
- Foie gras, blue cheese, -desserts (fishing with honey, apricot tarte fine, "Tatin" pies with apples, pears, etc. exotic fruit, dessert made from dried fruits, Dax).
