Varietal: 100% Chenin

Winemaking:
Harvesting by successive tries-selecting clusters largely overripe.
Vendange full pressed directly and with caution.
Fermentation in barrels of 500 liters
None chaptalization.
Search for a natural sweet wine with a good balance alcool-sucres-acidité.
Matured in barrels and on the lees for 15 months.

Nose with highly complex flavors of overripeness confit (honey, quince, dried fruit, etc.) and beautiful minerality.
